  1. Prep the ribs: Rinse, dry, trim, and remove membrane.nApply binder & rub: Coat both sides with mustard and rub.nSmoke 3 hours: Preheat smoker to 225°F. Place ribs meat side up and smoke for 3 hours. Optional: Spritz every 30–45 minutes.nWrap for 2 hours: Place ribs on foil, brush with butter and honey, wrap tightly. Smoke meat side down for 2 hours at 225°F.nUnwrap & sauce 1 hour: Place ribs back on smoker, meat side up, brush with BBQ sauce, and cook 1 additional hour.nCheck doneness: Internal temp 198–203°F, bending test, or exposed bone.nRest & slice: Rest 15 minutes, then cut and serve..
